How to Cook the Perfect Burger: Tips from Your Local Butcher

There’s nothing quite like a perfectly cooked burger—crispy on the outside, juicy on the inside, and packed with flavor. At Sussex Meat Packing, we know great burgers start with great meat. With Father's Day on the horizon, we decided to give you our step-by-step guide to making burgers that people will talk about all summer.


1. Start with Quality Ground Beef

We recommend an 80/20 blend—80% lean, 20% fat—for the ideal juiciness and flavor. Our beef is ground fresh daily right in our store. Want something extra special? Ask about custom blends like brisket-chuck or short rib-beef combinations.


2. Don’t Overwork the Patty

Gently shape your patties to about ¾-inch thick, handling the meat as little as possible. Make a small thumbprint in the center—this helps it cook evenly and prevents puffing.

3. Keep It Simple with Seasoning

Right before cooking, season both sides with kosher salt and freshly ground black pepper. No need to overdo it—good beef speaks for itself.


4. Cook with Confidence

Whether you’re using a grill or skillet, preheat it until hot.


  • Cook 3–4 minutes per side for medium-rare

  • 4–5 minutes per side for medium

  • Avoid pressing down on the patty—it releases precious juices!



5. Let It Rest

After cooking, let burgers rest for 3–5 minutes before serving. This helps the juices redistribute so your burger stays juicy all the way through.


6. Build Your Burger Like A Pro

Get creative—or keep it classic. Try these combos:


  • Classic: Cheddar, lettuce, tomato, pickles, ketchup & mustard

  • Bold: Blue cheese, caramelized onions, arugula

  • Breakfast Style: Fried egg, bacon, cheddar, hash brown


Pro Tip: Toast your buns in butter for an extra layer of flavor and crunch.

  • 1 lb 80/20 ground beef

Instructions


  1. Divide beef into 4 equal portions. Shape into ¾-inch patties. Make a thumbprint in the center.

  2. Season with salt and pepper.

  3. Cook on a hot grill or skillet: 4 minutes per side for medium.

  4. Let rest 3 minutes before serving.

  5. Toast buns, add toppings, and enjoy!
